Caramel S’mores Rice Krispy Bites

If you’re like me, you absolutely love s’mores and you love that delicious taste. Being in Arizona though it’s really hot outside even at nighttime, so a bonfire is sometimes out of the question.

I grew up camping constantly and roasting marshmallows, making s’mores and enjoying that ooey gooey chocolate on that graham cracker in between that marshmallow! It was honestly the best part of my childhood. Almost every weekend, camping, smelling the fire, the crackling, running around, it was magical. So not being able to do it as often now, I have to find new ways to incorporate s’mores cause I’m pretty sure they are in my blood at this point.

Summer time is all about fun treats and making memories! This one is so easy to make and something the kids will love to do with you! Let them get messy & just soak in the moment!

I promise this recipe is sure to be a hit for everyone in the house, it’s so simple and doesn’t take much time at all. You probably already have most of the ingredients in your house if you love s’mores like me! Be sure to try it and let me know how you like it!

S’mores Rice Crispy Bites!

delicious ooey gooey s’mores in one pan!
Course Dessert

Ingredients
  

  • 6 tbsp salted butter
  • 16 Oz Mini marshmallows
  • 5 1/2 cups Golden graham cereal
  • 1 Cup Semi sweet chocolate chips
  • 1 Bar Herseys chocolate
  • 1 bottle Caramel (or caramel bites and melt them) totally optional.

Instructions
 

  • Coat a 9×13 baking dish with cooking spray. Set aside
  • Place cereal in a large bowl. Add the chocolate chips.
  • Remove 3 cups of mini marshmallows from bag. Toss with the cereal and chocolate chips. Set aside the other 1/2 cup marshmallows to press onto bars later
  • In a pot, melt the butter over medium-low heat. Add the remaining marshmallows. Stir constantly until just barely melted. Remove from heat. Let cool for 2 minutes.
  • Pour the melted marshmallows over the cereal mixture. Stir until evenly coated. Pour into the prepared pan and flatten with a greased spatula or rolling pin.
  • Separate the herseys bar into squares and then cut them in half so they are in 4th.
  • Press the chocolate squares and the rest of the marshmallows into the top of the Rice Krispies.
  • Cool completely and then just cut them however you’d like. I did little balls so my kids could just grab them and eat! You could also do squares!
  • OPTIONAL** add caramel drizzle over the top.

I mean I had to seriously stop myself from eating this entire pan. (Oh pregnancy) This was so delicious and everyone loved it! It was the easiest dessert I think I’ve ever made! The caramel is totally optional but I’m obsessed with it so it was a must for me! You can even do caramel chocolate chips in it as well!
