Pumpkin King Mini Cheesecakes (for a beginner)

If you know me then you know i’m obsessed with two things. Technically three… Halloween because ALL THINGS SPOOKY, sweet treats and the pumpkin king! So i decided although i’m definitely not an artist that I wanted to incorporate them all and make some Pumpkin King Mini Cheesecakes! They came out so cute, I had my kids help me and they loved it.

Who is the Pumpkin King?

Now if you are sitting here saying ”What in the world is the pumpkin king?” then I need you to Pin this so you don’t lose it and then get off your phone/computer and immediately go watch The Nightmare Before Christmas Right now. It’s an absolute favorite of mine and I watch it at least twice a week, especially in October. The Pumpkin King is the King Of Halloween and He’s just perfect. Sweet but Spooky just like these Cheesecakes!

I love doing sweet treats and things especially for the holidays because it reminds me so much of my time as a kid. As A Kid, I remember always being in the kitchen with my grandma, cooking, baking and having so much fun. I love being able to pass that down to my kids.

With this dish, it’s sweet but not overly sweet. I’m not a huge Oreo person but this Oreo crust is the perfect touch to these. Of course it works well because jack (the pumpkin king) is black/white so it goes well. If you would rather not use oreos you can use Chocolate Graham Crackers as well and add a bit of brown sugar with the butter. My kids are obsessed with oreos and they had so much fun making these plus did pretty well on the jack face also!

Pumpkin King Mini Cheesecakes

Ingredients

  • Crust
  • 2 cups crushed oreos

  • 8 tablespoons butter, melted

  • Cheesecake filling
  • 16 ounces. 2 blocks cream cheese, softened

  • 2/3 cup sugar

  • 2 large eggs

  • 2/3 cup sour cream

  • 1 teaspoon vanilla extract

  • Optional for topping (if you just want these delicious mini cheesecakes then ignore this part.
  • Sprinkles or any toppings you’d like

  • Writing pen or gel for jack face

Directions

  • Crust
  • So for this crust, I thought I had oreos and I didn’t so I used a packet of oreo desert I did have. same concept just smaller portion..
  • if you buy the oreos for the crust, just simple crush them up. leave the filling in them or take out, up to you.
  • Add in melted butter and mix up
  • Then you’ll line your cupcake pan with liners and place the crust at the bottom, totally up to you how thick you like your crust or not. We are only doing 12 but this can make up to 18.
  • Mini cheesecakes
  • Pre-heat over to 350 degrees F.
  • For the Mini Cheesecakes you’ll first get your softened cream cheese and beat that until cream and smoothy.
  • Add sugar and beat until light and fluffy
  • Add egg and vanilla, beat until creamy
  • Stir in sour cream
  • Then you’ll put about 2 tablespoons of filling on top of the crust in all 12 muffin cups
  • Bake on middle rack for 15 minutes until it no longer looks wet but the center jiggles
  • Remove from oven and set on cooling rack
  • Let cool for an hour
  • Once they’ve cooled you can decorate with the writing pen/gel or add sprinkles, etc or leave as is!
  • If you have kids, they will love to decorate these. Mine had a blast! Enjoy!
