Spring Confetti bars!

Spring treats! My friends and I have brought you a treat train! You can read all about my treat and find the recipe here. At the end of my blog I’ll link all their pages and posts for you to check theirs out too!

So since we’re all stuck inside i’ve been baking like no other. It’s something fun to do to pass the time, especially with those kiddos! Make the mess and enjoy each other while making a delicious treat! These are something my kids love (I mean who wouldn’t?)

These spring bars are pretty simple to make and so delicious to eat! We spend a ton of time in the kitchen and we hope you enjoy these as much as us!

Spring Confetti Bars.

Ingredients you need*

12 tablespoons unsalted butter at room temp.

1 cup white granulated sugar

1/2 cup light brown sugar (lightly packed)

1 large egg

1 large egg yolk

2 cups and 2 tablespoons white all purpose flour

2 teaspoons vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon fine sea salt

1 and 1/3 cups white chocolate chips (could use regular also)

3 cups mini marshmallows

3/4 cup spring colored m&m’s

1-3 tablespoons spring colored sprinkles

Most of these you probably already have in your pantry/kitchen. If you don’t you can always do a grocery pick-up. I promise you want to try these!

How to make!

  1. Mix butter and sugars together
  2. Mix until creamy and smooth.
  3. Add one egg, one yolk and vanilla. (discard the egg whites)
  4. Add dry ingredients
  5. Mix until a thick dough forms (kitchen-aids are life for this)
  6. Add in the chocolate chips
  7. Mix them in to finish the confetti dough.
  8. Press dough in parchment paper lined 9×13- inch pan ( I used the wrong pan today but they still came out good just remember they will rise quite a bit.
  9. Bake at 350* until browned on top. (15-20 min)
  10. Add marshmallows as soon as removing from oven and then put back in for about a minute.
  11. Remove from oven, sprinkle on m&m’s, chocolate chips and sprinkles! Let them sit for about an hour before cutting in or they won’t cut properly.

These babies are so good and hit that sweet tooth just right. Don’t be afraid to mix it up a little and make it your own. After all, We’ve got nothing but time! right?
