Homemade Sugar Cookies and Icing For Santa!

I have shared this recipe before but I decided to share it again because this time we did Christmas cookies and they came out so cute! My kids have such a blast making these cookies and making a huge mess but its so worth it!

This Christmas I’m not sure if it’s because the world is upside or what but I’m feeling the same. I feel like we haven’t done enough, even though we’ve looked at Christmas lights with hot cocoa a million times, we’ve went to drive through light shows, we’ve been to the glitters, we’ve made donuts and cookies and charcuterie boards, we’ve made DIY advent calendars, we’ve gotten Christmas pajamas and watched movies but I somehow still feel like it hasn’t been magical enough.

Then my kids tell me how much they love me and how fun it’s been this year. I feel a little more okay. I know next year we’re going to live a little more simple and stop trying to keep up with everything. We’ve done tons this year and it’s been truly magical. I can’t wait to watch those sweet little faces light up on Christmas morning. My grandparents are even here for an entire month and it brings me so much joy that my kids get to somewhat experience what I did as a kid.

Ok onto the recipe, this is hands down one of my favorites. These delicious and soft cookies are another favorite dessert. It’s not just for Christmas. You can make these anytime of the year and they taste the same (lol) Maybe they do taste a little more magical around Christmas.

How To Make These Delicious Soft & Chewy Cookies!

Sugar Cookies

These sugar cookies are such a delight and so easy to make!
Prep Time15 minutes

Equipment

  • kitchen-aid or mixer
  • Rolling Pin
  • bowl
  • measuring cups

Materials

  • 4 cups flour
  • 1/2 tbs salt
  • 1 tbs baking soda
  • 3/4 cup softened butter
  • 1 cup sugar
  • 1 large egg
  • 1/2 tsp almond extract

Instructions

  • Combine 2 1/2 cups of flour 1/2 tsp salt, 1 tsp baking soda, set aside.
  • in mixer bowl, combine 3/4 c softened butter and 1 cup sugar until fluffy. (3 minutes or so)
  • Add 1/2 tsp. almond extract and 1 large egg. Beat to combine
  • Gradually add flour mixture and mix until blended. (5-6 minutes)
  • Gather dough into ball, flatten into round disk. Wrap and then refrigerate 2 hours or up to 2 days.
  • Once you've refrigerated roll out dough on floured surface, cut out cookies with cookie cutters and bake 6 minutes on 350 degrees F. (or longer depending how soft or hard you want them) Let cool before decorating.

Then we have the easy and delicious icing! I added a little vanilla to it and it makes the perfect frosting! I mostly just eyeball it and get it to the consistency I like! Make any color you want using food coloring!

Ingredients
  

  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • food coloring

Instructions
 

  • Mix together all of the ingredients in a bowl
  • split up the glaze and add food coloring as desired
  • you can add these to bags or if you have icing bags that's perfect as well!

Notes

** I basically just eye ball this to get it to the consistency I want! I like it a little thicker so I add more powdered sugar as needed.

There you have it, the easiest most delicious soft and chewy sugar cookies you’ve ever made! I think these will forever be my favorite cookie recipe! I love soft cookies and these stay super soft!
