Ok so I’ve literally been obsessed with Olive Garden’s Chicken Gnocchi Soup for as long as I can remember. It’s a favorite around here and if i could go to Olive Garden everyday and get it, I would. I love a good hot soup especially during the winter. It’s hands down the best. Especially with everyone being stuck at home. This is such a comfort food.

I was a bit nervous to make this myself as I’m not the best in the kitchen. I have a few dishes I can whip up like nobody’s business but this one I’ve been perfecting for awhile. It’s so so easy and so delicious. If you love Olive Garden you will 100% love this and love how easy it is to make. 

You can definitely make the gnocchi yourself but for me I bought it at the store because with two littles it’s a tad difficult to do anything time consuming. This was so easy I had it prepped and done in 30 minutes! (Maybe even less)

To save yourself some time you can buy a rotisserie chicken or you can even buy a cooked bag of chicken (I grabbed the rotisserie seasoned chicken strips from Walmart and wow!) The flavor was seriously perfect for this dish. You can definitely also whip up your own chicken prior to starting this in the instant pot or even throw the chicken in the instant pot first. Either way this is a MUST HAVE comfort food.

30 minute instant pot olive garden copycat chicken gnocchi soup

Savory, Comfort Soup.
Prep Time 15 minutes
Cook Time 15 minutes

Equipment

  • Instant Pot

Ingredients
  

Wet Ingredients

  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 3 cups half and half

Dry Ingredients

  • 1 1/2 pounds cubed chicken (or shredded)
  • 1/2 cup celery
  • 1 cup shredded carrots
  • 1 package potato gnocchi (16 OZ)
  • 2 cups fresh spinach

1. Throw the oil, chicken and celery in the instant pot on sauté. Sauté 4 minutes.

2. Add chicken broth, carrots & then place lid on instant pot and seal shut.

3. Close the pressure release valve, turn on pressure cook, cook 4 minutes.

4. When it’s complete quick release pressure and open the lid. 

5. Set the instant pot to sauté and carefully add the spinach, half and half and gnocchi. 

6. Continue to heat the soup on the sauté function until boiling. Make sure to stir for about 3-4 minutes to make sure gnocchi is done.

7. Add some Parmesan cheese (optional) and serve immediately!

Beyond easy and so delicious. Instead of taking a trip to Olive Garden just whip this up in your own kitchen and enjoy while watching your favorite movie. Add a salad on the side and you’ll never wanna stop making this delicious dish.
